Bacon jam

BACON!!  JAM!!  Seriously - what could be better?  I absolutely love this on avocado toast (pictured) but it is good on anything that bacon is good basically anything.

Prep Time:                 15 minutes

Cook Time:                45 minutes

Total Time:                60 minutes

Servings:                    8-10


1 1/2 lb of good bacon

1       Medium onion diced

1       Tbsp of minced garlic

1       Tbsp of grainy mustard

2       Tbsp Molasses

1 1/2 Oz of Good Bourbon

1       Cup of coffee

2       Tbsp Brown Sugar (optional)


1   Cut the bacon into roughly 1/2 inch pieces and cook in either a deep pot or a cast iron pan (I prefer the cast iron).  You will need to do this in batches and put the cooked bacon pieces on a  paper towel lined plate to drain.

2.  Drain the excess bacon grease and then saute the onions and garlic in the same pan/pot over medium heat until the onions are translucent - about 5 minutes.

3.  Add the cooked bacon, mustard, molasses, bourbon, coffee and if desired, sugar into the pan and turn heat to medium low.

4.  Let the mixture simmer for at least 20 minutes and stir regularly.

5.  Either serve immediately or refrigerate in a Tupperware or mason jar.  Serve cold or reheated over basically anything.  It is Bacon Jam after all.
